“Colours of China” is a sensory journey through the four seasons, presenting 16 handcrafted cocktails and mocktails, each linked to one of the 24 Solar Terms—an ancient Chinese calendar system that marks the shifting rhythms of nature.

“Our inspiration comes from China’s rich history of colour symbolism and the ancient art of printing,” says Tiger Chang, Head Bartender of MO Bar. “Each drink is crafted to embody a traditional colour, a seasonal moment, and a distinct flavour profile. The result is an immersive, interactive experience where every sip reveals a story.”

The Four Seasons, Reimagined in a Glass

The menu is divided into Spring, Summer, Autumn, and Winter, with each season featuring four meticulously crafted cocktails and mocktails, harmonized with a curated seasonal bar bite.

• SPRING – Lutinus 黄粟留, a vibrant, tomato-forward cocktail, and Blush 盈盈, a floral and fruity blend of rose, strawberry, and guava, capture the season’s awakening.

• SUMMER – The cooling Turquoise 水龙吟, with baijiu, cucumber, and plum, mirrors the heat of summer, while Scarlet 朱孔阳 delivers rich fig and sherry notes.

• AUTUMN – As leaves turn golden, Azure 苍苍 brings the earthiness of green tea, while Ruby 银朱 showcases woody and strawberry-fermented flavours.

• WINTER – Canary 莺儿, a mezcal and mango creation, evokes winter’s warmth, while Vermilion 鹤顶红, infused with Pu’er tea and red date, pays tribute to comforting seasonal traditions.

Each drink embodies a carefully chosen colour that directly corresponds to its flavour profile, ensuring a multi-sensory experience that blends art, science, and taste.

A Tribute to Ancient Printing and Modern Innovation

Beyond its remarkable flavours, “Colours of China” is an homage to China’s pioneering history of printing, with the menu itself designed as a work of art. Inspired by movable-type printing, the menu features interactive acrylic pages and pull-out colour panels, allowing guests to visually and physically explore the stories behind each cocktail.
