Shenzhen (July, 2023) – Grand Hyatt Shenzhen has recently appointed Larry Liu as Chinese Executive Chef, spearheading the overall operation and management of the Chinese restaurant kitchen. Chef Larry is from Wengyuan, Shaoguan, Guangdong, possessing extensive experience in kitchen and restaurant operations management. Driven by a passion for culinary arts, he began his journey in the renowned Guangzhou Liyuan Restaurant, often referred to as the “Shaolin Temple of Cantonese Cuisine,” where he accumulated valuable experience. He proactively took on multiple roles in various positions, constantly solidifying his foundation. Chef Larry never limited himself to comfort in the present. Throughout his more than 20 years in the industry, he has traveled extensively across the country, actively integrating local dining customs and characteristics, promoting innovative fusion, and spreading the culinary culture of Cantonese cuisine. In August 2009, Chef Larry embarked on his hotel career when he joined Grand Hyatt Guangzhou. Subsequently, he served as the Executive Chef at Hyatt Regency Dongguan, during which he concurrently held the positions of the President of the Dongguan Catering Association and Vice President of the Guangdong Food Culture Association for two consecutive terms.

The concepts of “seasonality” and “preserving the original flavors” are essential in Cantonese cuisine, and they have been upheld by China Lodge since its inception. These principles are not only the fundamental values of the restaurant’s dining service, but also the guiding principles that Chef Liu adheres to in his cooking process. In order to fully utilize the unique characteristics and original flavors of each ingredient, Chef Larry delves deep into the study of their traits and considers local cooking customs. By integrating such knowledge and innovatively combining it with traditional Cantonese culinary techniques, he creates a plethora of unique and exquisite dishes. CHEF’S SPECIAL FRIED RICE

Fortune God’s Enchanting Rice’ is a well-known classic Hong Kong dish, and classics are often difficult to surpass. However, Chef Liu fearlessly transforms the classic by infusing it with his own ingenuity and innovation. Departing from the traditional method of stir-frying leftover rice, he incorporates fresh rice into the wok and quickly stir-fries it with dried scallops, crab meat, sea urchin, and goose egg. During the cooking process, the enticing aroma envelops every grain of rice, filling the entire space and tantalizing the tastebuds of diners. Seizing the opportunity while the piping hot rice exudes a rich aroma, it is swiftly savored. Each plump and distinct grain of rice instantly melts in the mouth like a dreamy bubble, leaving behind the savory sweetness of the seafood and the fragrant essence of the rice; a lingering and unforgettable sensation.

HONEY-GLAZED ‘CHAR SIU’ CHINESE BARBECUED PORK

For the remarkable black char siu, we select visually appealing pork with a perfect balance of fat and lean meat. It is marinated with honey and then roasted on skewers in the oven until the outer skin becomes slightly crispy, while the meat remains tender and juicy. When plating, a creative touch is added by garnishing the char siu with a layer of finely chopped lemongrass. Taking a bite, the first sensation that fills the mouth is the rich aroma of the char siu combined with the sweetness of the honey. The refreshing and fragrant lemongrass follows closely, enhancing the overall experience and prolonging the delightful flavors of the char siu. PAN-FRIED WHOLE FISH MAW, PRESERVED VEGETABLE, CRAB MEAT

Carefully selected premium fish maw is prepared in a dry-tossed style, combining it with fresh vegetables, aromatic spices, and secret seasonings. This dish preserves the tender and chewy texture of the fish maw while highlighting the refreshing crispness of the vegetables.
