Hyatt Regency Shenzhen Airport welcomes Chinese New Year with refreshed menu

January 19, 2024 (Shenzhen) – Today Hyatt Regency Shenzhen Airport unveiled a revitalized menu for 2024 at the hotel’s Chinese restaurant and hosted a successful media tasting event.

The Xiang Yue Chinese Restaurant, known for its selection of high-quality ingredients by discerning chefs, showcases a fusion of authentic Cantonese cuisine with a variety of regional delicacies. The new menu, in celebration of the upcoming Chinese New Year, presents an annual special featuring traditional festive gastronomy.

The menu introduces many appetizers featuring regional flavors, which charm patrons with the unique cultural essence associated with the spring festival.

One of the highlights is the “lo hei,” which in Cantonese literally translates to “tossing up good fortune.” It is actually a ritual that involves a group of people gathering around a massive plate, tossing its contents while speaking auspicious phrases before eating it; it is popularly believed that the higher the toss, the better your prospects and fortune in the year ahead. At Xiang Yue, the lo hei features abalone and conch, ingeniously blending culinary and regional cultural elements.

Also recommended is the Cantonese-style barbecue platter which retains the essence of the ingredients while incorporating homemade sauces, expertly roasted in an open oven to achieve a delightful, crispy yet succulent texture.

The dish of the 24-day-aged squab undergoes a meticulous marinating process with homemade sauces, followed by a combination of low and high-temperature frying; the result is a crispy skin and tender, succulent meat exuding rich flavors.

One of the featured dishes, “Dragon Soaring Over the Sea,” highlights the use of New Zealand natural lobster, skillfully steamed with a rich lobster broth, presenting a delicate, velvety texture and an evocative aroma of aged huadiao wine.

Other delicacies include the featured tangy and spicy soup-drenched star grouper, crispy prawn balls, and the braised fresh abalone.

The grand finale of the banquet introduces a sumptuous selection of desserts, adding a sweet note to the celebration.
